Vegetable Tots

Healthy Veggie Tots including zucchini and carrot.

Ingredients

  • 1 zucchini, peeled
  • 1 carrot, peeled
  • 1 large egg
  • ¼ cup breadcrumbs
  • ¼ cup Parmesan cheese, low sodium
  • ¼ tsp. black pepper

Instruction

  • Preheat air fryer to 400 F.
  • Grate zucchini and carrot. Remove excess water.
  • In a bowl mix zucchini, carrot, egg, breadcrumb, cheese, and black pepper together.
  • Form tots and place in air fryer in a single layer.
  • Air fry for 10 minutes.
