Sweet Potato Casserole with Marshmallows makes creamy and delicious holiday classics.
Ingredients
- 5 sweet potatoes, sliced
- ¼ cup reduced fat margarine
- ½ cup packed brown sugar
- 3 tablespoons orange juice
- 1 pinch ground cinnamon
- 1 package miniature marshmallows (10.5 ounce)
Instruction
- Preheat oven to 350 F.
- Boil sweet potatoes with water to cover in a pan, for 15 minutes.
- Drain and mash sweet potatoes and blend with the margarine, brown sugar, orange juice, and cinnamon evenly. Spread in baking dish.
- Top with marshmallows. Bake for 25 – 30 minutes.
