Southwestern egg cup

These southwestern egg cups are perfect for breakfast with tons of flavor.

Ingredients

• 10 eggs
• 1/4 cup half-and-half
• 2 tablespoons Vegetable Seasoning
• 4 slices bacon, cooked and cut to crumble
• 1 medium avocado, chopped
• 1 cup shredded Cheddar cheese, divided
• 1/2 cup canned black beans, drained
• 1/2 cup kernel corn
• 1/4 cup red bell pepper, chopped

Instruction

1. Spray or brush muffin pan with oil. Preheat oven to 350F.
2. Beat eggs, half-and-half and Seasoning in bowl. Stir in crumbled bacon, avocado, 1/2 cup of the cheese, beans, corn and bell peppers; mix well. Fill in muffin pan and sprinkle with remaining cheese.
3. Bake 18 minutes. Cool 5 minutes on rack before serving.
