Cooking shrimp scampi in pressure cooker is so much faster than the traditional way. It taste better and easier to make scampi using this recipe.
Ingredients
• 2 lb. shrimp
• 2 tablespoons extra virgin olive oil
• 2 tablespoons butter
• 1 tablespoon garlic minced
• 1/2 cup white wine
• 1/2 cup chicken stock
• 1lb. pasta
• 1 tablespoon fresh squeezed lemon juice
• Sea salt to taste
• Black pepper to taste
Instruction
1. Add the oil and butter in pressure pot that is set to Sauté mode. After butter is melted, add the garlic cook to fragrant.
2. Add white wine and chicken stock to pot, and stir
3. Add the shrimp and cover lid and set to meat/stew setting for 1 minute. Allow natural release (5 minutes) then quick release for remaining pressure.
4. Add in the cooked pasta with the lemon juice, salt and pepper; and stir.
