Sheet Pan Pork Chop With potatoes and carrots

Baked pork chops on a sheet pan with vegetable make a flavorful dinner.

Ingredients

  • 4-6 medium potatoes, cut into 1-inch chunks
  • 1 cup frozen baby carrots
  • 1 cup frozen green beans
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • salt and pepper, to taste
  • fresh parsley for garnish

Instruction

  1. In a bowl add the olive oil, paprika, brown sugar, garlic powder, and salt and pepper and mix until it forms a paste.
  2. Preheat oven to 400 F.
  3. Rub the mixture onto both sides of the pork chops. Add potatoes, carrots and green beans to a sheet pan.
  4. Pour the olive oil, lemon juice, garlic powder, parsley and salt and pepper over the top and toss to coat.
  5. Place pork chops on top. Bake for 20 minutes.
