Sheet-Pan Chipotle-Lime Shrimp Bake

This recipe of shrimp taste amazing with chipotle sauce but takes very little effort.

Ingredients

• 1-1/2 pounds baby red potatoes, cut into 3/4-inch cubes
• 1 tablespoon extra-virgin olive oil
• 3/4 teaspoon sea salt, divided
• 3 medium limes
• 1/4 cup unsalted butter, melted
• 1 teaspoon ground chipotle pepper
• 1/2-pound fresh asparagus, trimmed
• 1/2-pound Broccolini or broccoli, cut into small florets
• 1-pound uncooked shrimp (16-20 per pound), peeled and deveined
• 2 tablespoons minced fresh cilantro

Instruction

1. Preheat oven to 400F.
2. Sprayed cookie sheet pan with oil. Place potatoes in pan and drizzle with olive oil. Sprinkle 1/4 teaspoon sea salt; and mix all together. Bake 30 minutes.
3. In a bowl, squeeze 1/3 cup juice of limes. Mix lime juice, melted butter, chipotle and the rest of sea salt.
4. Remove potato from oven and stir. Put asparagus, Broccolini, shrimp and limes on top of potatoes. Pour lime juice mixture on shrimp with the vegetable.
5. Bake 10 minutes, sprinkle cilantro.
