Try this tenderness and flavorful roasted leg of lamb.
Ingredients
- 1 (5 to 6 pound) trimmed bone-in leg of lamb
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon Dijon mustard
- 1 tablespoon kosher salt
- 2 teaspoons ground black pepper
Instruction:
- Pat lamb dry and make shallow cuts over lamb.
- Preheat oven to 350 F. Line aluminum foil on pan.
- In a bowl, combine garlic, olive oil, rosemary, thyme, Dijon, salt and pepper. Spread spice mixture evenly over lamb, rubbing in thoroughly.
- Place into oven and roast about 1 hour 30 minutes for medium (an internal temperature of 135 F). Let rest 15 minutes before serving.
