Pistachio Crusted Salmon

Delicious bake salmon topping with a pistachio crust

Ingredients

  • 2 salmon fillets, clean and dry
  • Salt and pepper, to taste
  • ½ lemon, juiced
  • ¼ tsp lemon zest
  • 1 Tbsp. coarse grain mustard
  • 1 Tbsp. honey
  • ¼ cup pistachio, shelled and minced
  • 2 Tbsp. panko bread crumbs
  • 1 Tbsp. olive oil

Instruction

  1. Preheat oven to 375F
  2. Lined baking pan with parchment paper, salmon skin side down. Sprinkle with salt and pepper to taste.
  3. In a bowl, combine lemon juice, lemon zest, mustard and honey. Spoon mixture and spread evenly over top of each salmon fillet.
  4. Combine pistachio with panko and olive
  5. oil. Spread and lightly press on pistachio mixture on salmon.
  6. Bake 15-20 min, let sit for 5 min before serving.
