This Mediterranean flatbread tops with healthy and delicious ingredients, it’s perfect for an appetizer or a light meal.
Ingredients
• 1 jar marinated artichokes (12 oz.)
• 1 cup grape tomatoes, sliced
• 1/4 cup sun-dried tomatoes
• 1 can black olives (2.25 oz.), sliced
• 1/2 cup sliced prosciutto
• 2 Tbsp. fresh basil, sliced
• 2 naan flatbreads (about 8-inch)
• 3 Tbsp. olive oil
• 1 Tbsp. white wine vinegar
• 1 garlic clove, minced
• 1/2 tsp Dijon mustard
• 2 tsp honey
• Kosher salt and fresh black pepper, to taste
Instruction
1. Mix together the artichokes, grape tomatoes, sun-dried tomatoes, olives, prosciutto, and basil in a bowl. Whisk in olive oil, vinegar, garlic, mustard, honey, a pinch of salt and pepper; toss to combine.
2. Preheat the oven to 400 F. Place flat bread on a baking pan and set setting to toast for 7-10 minutes (until crisp).
3. Divide the artichoke mixture over each flat bread.
