Keto Tuscan Soup

This Keto Tuscan Soup with Italian sausage is creamy and delicious with tons of flavor.

Ingredients

• 1 lb. Hot Italian sausage, chopped
• 1 large onion, chopped
• 3 cloves garlic, minced
• 1 teaspoon dried oregano
• 1/2 cup sun-dried tomatoes, chopped
• Salt and freshly ground black pepper, to taste
• 6 cup low-sodium chicken broth
• 1 bunch kale, chopped and leaves removed
• 3/4 cup heavy whipping cream
Instruction

1. Set setting to sauté mode. Add Italian sausage and cook, about 3-5 minutes. Add garlic, onion, and oregano to the sausage. Cook, about 2-3 minutes (until onion is soft).
2. Add in chicken broth and sun-dried tomatoes; stir until well combined.
3. Set the pressure to high, and cook for 5 minutes, then quick release pressure.
4. Set sauté mode and stir in kale 1-2 minutes. Stir in heavy cream about 1 minute.
5. Add seasoning of salt and pepper to taste.
