Served as a Greek appetizer, spinach pies made with feta cheese, ricotta cheese and spinach leaves
Ingredients
- 5 pastry sheets
- 250 g feta cheese, break up to big chunks
- 1 cup frozen spinach, thawed and chop
- 1 egg
- 1 spring onion, chop
- 1/4 tsp ground black pepper
- 1 cup olive oil
Instruction
- In a bowl add cheese, spinach, onion, salt and pepper together with the egg and mix well until combined until a uniform paste.
- Lay 1 pastry sheet and brush generously with olive oil. Hold it in half, then cut it into 4 strips.
- Place a teaspoon of the spinach mixture at the end of each strip, then fold it into a tringle.
- Repeat steps.
- Line a dish with parchment paper and bake the triangles at 350 F.
