Creamy tomato soup with lots of flavor and goes great with a buttery frilled cheese sandwich.
Ingredients
• 1 Tbsp. butter
• 1/2 onion, diced
• 4 14.5oz cans organic diced tomatoes
• 2 Tbsp. sugar
• 1 C chicken broth
• 1 Tbsp. dried basil
• 1/2 C heavy cream
Instruction
1. Setting on Sauté, add butter to melt. Cook onion until softer (5 minutes).
2. Pour in the tomatoes, sugar, chicken broth, and basil in pot and stir. Close lid and cook on high pressure for 7 minutes. Quick release of the pressure.
3. Transfer soup to a blender and blend until smooth. Stir in heavy cream to serve.
