This recipe of air fried coconut shrimp gives a spicy flavor from the panko crumbs. It is a perfect snack or appetizer before meal.
Ingredients
• 1/2-pound fresh large shrimp
• 1/2 cup sweetened shredded coconut
• 3 tablespoons panko bread crumbs
• 2 large egg whites
• 1/8 teaspoon salt
• Pinch of pepper
• Pinch of Louisiana-style hot sauce
• 3 tablespoons all-purpose flour
• 1/3 cup apricot preserves
• 1/2 teaspoon cider vinegar
• Dash crushed red pepper flakes
Instruction
• Clean and peel off shrimp. Mix coconut with bread crumbs in a bowl. In another bowl, whisk egg whites, salt, pepper and hot sauce. Place flour in the third bowl.
• Preheat air fryer to 375F.
• Dip shrimp in flour bowl, then dip in egg white mixture, and last in coconut mixture.
• Place shrimp in a single layer on greased tray in air-fryer basket. Cook 4 minutes, turn shrimp over and cook another 4 minutes.
• To make the dipping sauce; mix apricot, vinegar, and red pepper flakes. Microwave in a bowl until everything is melted and mix. Serves with shrimp.
