Healthy Veggie Tots including zucchini and carrot.
Ingredients
- 1 zucchini, peeled
- 1 carrot, peeled
- 1 large egg
- ¼ cup breadcrumbs
- ¼ cup Parmesan cheese, low sodium
- ¼ tsp. black pepper
Instruction
- Preheat air fryer to 400 F.
- Grate zucchini and carrot. Remove excess water.
- In a bowl mix zucchini, carrot, egg, breadcrumb, cheese, and black pepper together.
- Form tots and place in air fryer in a single layer.
- Air fry for 10 minutes.
