Greek Spanakopita Triangles

Served as a Greek appetizer, spinach pies made with feta cheese, ricotta cheese and spinach leaves

Ingredients

  • 5 pastry sheets
  • 250 g feta cheese, break up to big chunks
  • 1 cup frozen spinach, thawed and chop
  • 1 egg
  • 1 spring onion, chop
  • 1/4 tsp ground black pepper
  • 1 cup olive oil

Instruction

  1. In a bowl add cheese, spinach, onion, salt and pepper together with the egg and mix well until combined until a uniform paste.
  2. Lay 1 pastry sheet and brush generously with olive oil. Hold it in half, then cut it into 4 strips.
  3. Place a teaspoon of the spinach mixture at the end of each strip, then fold it into a tringle.
  4. Repeat steps.
  5. Line a dish with parchment paper and bake the triangles at 350 F.
