Moist Fruit Cake

A traditional moist fruit cake made with dried fruit walnut and pecans.

Ingredients

  • 1 cup chopped mixed candied fruit
  • 1 cup finely chopped pecans
  • 1 cup finely chopped walnuts
  • 1 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried apples
  • 2-1/2 cups all-purpose flour, divided
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 large eggs
  • 2 cups applesauce
  • 2 teaspoons vanilla or rum extract
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice

Instruction

  1. In a bowl, mixed candied fruit, pecans, walnuts, raisins, dried apricots, dried apples, and 1 cup flour to coat.
  2. In a bowl, whisk butter, sugar, eggs, and vanilla extract.
  3. Combine the baking soda, cinnamon, salt, nutmeg, cloves, allspice and remaining flour and stir into sauce mixture. Add in fruit mixture and pour into a greased pan.
  4. Bake at 325F for 60-65 minutes.
  5. Cool for 10 minutes then remove from pan to a wire rack to cool completely.
