A traditional moist fruit cake made with dried fruit walnut and pecans.
Ingredients
- 1 cup chopped mixed candied fruit
- 1 cup finely chopped pecans
- 1 cup finely chopped walnuts
- 1 cup raisins
- 1/2 cup chopped dried apricots
- 1/2 cup chopped dried apples
- 2-1/2 cups all-purpose flour, divided
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs
- 2 cups applesauce
- 2 teaspoons vanilla or rum extract
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
Instruction
- In a bowl, mixed candied fruit, pecans, walnuts, raisins, dried apricots, dried apples, and 1 cup flour to coat.
- In a bowl, whisk butter, sugar, eggs, and vanilla extract.
- Combine the baking soda, cinnamon, salt, nutmeg, cloves, allspice and remaining flour and stir into sauce mixture. Add in fruit mixture and pour into a greased pan.
- Bake at 325F for 60-65 minutes.
- Cool for 10 minutes then remove from pan to a wire rack to cool completely.
