Sheet pan breakfast hash taste delicious with egg on it.
Ingredients
• 2 sweet potatoes, peeled and cubed
• 2 potatoes, cubed
• 1/2 red onion, diced
• 1 garlic clove, minced
• 1 tablespoon olive oil
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 4 slices bacon, chopped
• 5 large eggs
Instruction
1. Preheat the oven to 425 degrees F.
2. In a bowl combine the potatoes, onions and garlic; drizzle on the olive oil, salt and pepper and toss until combine. Transfer on a baking sheet pan add on the bacon. Bake for 25-30 minutes (toss halfway).
3. Add eggs on top of the potato, and bake from 5-12 minutes (sunny side up or all the way cooked).
