This tasty southwest breakfast potatoes, onion and peppers can be bake right on the pan.
Ingredients
• 3 lb. red potatoes, scrubbed and cut into pieces (3/4-inch)
• 1/2 large onion, chopped
• 1/2 green bell pepper, diced
• 1/2 red bell pepper, diced
• 1/4 cup avocado oil
• 1/4 cup ghee, melted
• 1 tsp garlic powder
• 1 tsp sea salt
• 1 tsp cumin
• 1.5 tsp chili powder
• 1 tsp paprika
• 1/2 tsp cayenne pepper
Instruction
1. Preheat oven to 425F. Line baking sheet pan with parchment paper. Place diced potatoes, onions, both peppers, avocado oil and melted ghee. Add in garlic powder, sea salt, cumin, chili powder, paprika, and cayenne pepper. Use hands to mix well. Place potato onto the sheet pan.
2. Bake for 25 minutes (stir once halfway). Turn up oven temperature to 475F and cook for an additional 10 minutes.
