Chicken Rollatini with Spinach is a perfect family meal with chicken breasts filled with spinach and cheese topped with marinara sauce and melted mozzarella.
Ingredients
• 8 chicken cutlets
• 1 cup Panko breadcrumbs
• 2 teaspoons Italian seasoning
• 2/3 cup grated parmesan cheese, divided
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
• 3 eggs – divided
• 1/2 cup frozen spinach, thawed and squeezed
• 1 cup ricotta cheese
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1/4 teaspoon ground nutmeg
• 1/2 cup marinara sauce
• 8 slices fresh mozzarella
Instruction
1. Combine ricotta cheese, squeezed spinach (wet spinach will produce excess liquid), 1/3 cup grated parmesan, one egg, salt, pepper and nutmeg all in one bowl.
2. In another bowl, stir together bread crumbs, Italian seasoning, remaining parmesan, salt and pepper. In third bowl, scramble two eggs.
3. Lay chicken down and spread spinach-cheese mixture (about 2 tbsp.) on each cutlet. Loosely roll up, same for the rest of the chicken.
4. Preheat oven to 425F. Lightly spray or brush baking pan with oil.
5. Dip chicken roll into egg mixture, then in breadcrumbs and place pan (seam side down). And Lightly spray or brush chicken with oil.
6. Bake 25-30 minutes (internal temperature 165F). Remove from oven, top with marinara sauce and fresh mozzarella cheese (with another 5 mins for melted cheese).
