Baked cod is a great way to prepare low-carb fish that is quick and easy to make. Ingredients like lemon and parsley are perfect for a summer dinner.
Ingredients
• 3 tablespoons lemon juice
• 3 tablespoons butter
• 1/4 cup all-purpose flour
• 1/2 teaspoon salt
• 1/4 teaspoon paprika
• 1/4 teaspoon lemon-pepper seasoning
• 4 cod fillets (6 ounces each, or 12 ounces in total)
• 2 tablespoons minced fresh parsley
• 2 teaspoons lemon zest
Instruction
1. Preheat oven to 400F.
2. Melt butter and mix in lemon juice. In another bowl mix flour, salt, paprika and lemon-pepper seasonings. Dip fillets in lemon butter mixture, then dip in flour mixture. Make sure both sides are covered.
3. Place in a baking pan that’s pre-sprayed with oil. Bake 12-15 minutes. Mix parsley and lemon zest to sprinkle over fish after finish.
